About Freezing Technology
Different types of Flash Freezers
Do you know how many ways food is freezable?
There are more than one flash freezing mechanisms and scientific methods of freezing food. Therefore, it is natural to have a problem establishing which type is most effective for the corporation. There are also a plethora of vague information, and it is essential to have professional sources to have the right understanding of this technology. For those desiring to gain accurate information before considering which Flash Freezer is most adequate…
HERE is the complete breakdown information about the science of freezing.
First and foremost, there are 2 different types of Freezing
Air based Freeze（Air Blasting）
Through the use of electromagnetic waves and magnetic strength, this method works on the growth of nuclear ice. During the course of being frozen, the nucleus of the ice forms in increased numbers, and each particles are formed in a smaller size than normal. Therefore, the numerous ice particles prevent the dripping of raw flavor, enabling the food to be preserved at the highest quality and state of freshness. Below are the most common types of Air-based Flash Freezers
Liquid based Freeze
Often called Brine Freezing, this method bathes the food into alcoholic fuel ranging at approximately -30℃ and can freeze the product at an especially short amount of time. Due to the extremely minimized time it takes to reach the lowest temperature zone to crystallize the supply, the drip outflow is limited to the least possible amount. Because the supply is condensed, only food supply that are fully sealed/packaged can be frozen.
Below are the most common types of such Flash Freezers
With the use of -196℃ Liquid Nitrogen, the food supplies are frozen at the highest speed. However, often times, over 12mm of the cellular molecules are destroyed and due to the high costly needs, it has recently not increased in usage. To further understand the difference between the often compared Liquid Freezers and Nitrogen Freezers, please view here. As we have read thus far, there are three different method of freezing. “Air”, “Liquid” and “Nitrogen”.
Next, is the introduction of the definition of Freezing.
What exactly does Refrigerate and Cool mean？
Refrigerate refers to the temperature zone between 10℃ to 0℃.
Cooling is to freeze in a range between 5℃～0℃ and is used for low temperature refrigeration. The cooling temperature that is introduced here is said to be the best condition for food. The colder the condition, the more freshness can be maintained, but during the course of defrosting, the loss of quality occurs. Therefore, by preserving the ingredients at the appropriate temperature, the diminishing of quality is prevented and food can be frozen for a longer period of time.
Additionally, the Cooling zone of 0℃ may be within the graph of freezing point, but water doesn’t necessarily freeze fully at this temperature. Therefore, freezing at the cooling zone is executed at 0～-5℃, where approximately 80% of the water is turned into ice. However, during this process, the cellular walls are extremely damaged. It is difficult to decide whether Cooling or Freezing is the better method in preserving freshness.
A Freezer that utilizes Advanced Technology
In terms of freezing machines that handle food supplies, there are regular household, frozen product storage for business use, food freezer machines for corporations to operate on there products. In a regular household, the electrical device that holds refrigerating (freezing) function is known as a freezer. In some areas, there are instruments that posses both refrigerating and freezing abilities known as Refrigerator-freezer, and this all-in-one type is the most common today. Storage for frozen products are essentially the same, but the roles of each instrument tend to differentiate. The two most common type of freezer storage are below.
- For Retail purposes
・Refrigerator show case
- Utilizing the whole room
・Large sized Freezer
Along with such are other freezers that are specially made for raw food supplies, processed food, and made for the production and distribution facility.
The Liquid based Freezer, Re・Joice Freezer secures seasonal flavor into the food by freezing the supply to the core. It has been confirmed that some food products have actually ripened to a better taste than before.
When it comes to Air based Flash Freezers, there is nothing other than the 3D Freezer. Through overturning the classic method of freezing, the Anti Cycle Vibration Cold System (ACVCS) has been implemented and increased the use of higher humidity. This can prevent freezer burns and mists within the storage to bare minimum.
