Air based Freeze(Air Blasting)

Liquid based Freeze

What exactly does Refrigerate and Cool mean?
Refrigerate refers to the temperature zone between 10℃ to 0℃.

The colder the condition, the more freshness can be maintained, but during the course of defrosting, the loss of quality occurs. Additionally, the Cooling zone of 0℃ may be within the graph of freezing point,but water doesn’t necessarily freeze fully at this temperature. Therefore,freezing at the cooling zone is executed at 0~-5℃, where approximately 80% of the water is turned into ice. However, during this process, the cellular walls are extremely damaged. It is difficult to decide whether Cooling or Freezing is the better method in preserving freshness.
