For us professionals, conducting tests and looking at the raw data is very important as we need not only visual, but measurable data to best optimize production in terms of quality and efficiency.
This time, we used and compared the regular freezing with one of our advanced flash freezers and we have provided to you the results to see for yourselves what is the difference between regular freezing and flash freezing.
Yellowtail Fish
First, we would like to introduce a couple interesting facts about the yellowtail.
The yellowtail is famous for having different names, based on the sizes.
The grown and largest of the fish is called the yellowfish, but the smaller ones have a different name.

Here, we will be reporting the results of comparing the yellowtails frozen with an orthodox slow freezer and a flash freezer. Please view the pictures of naturally defrosted yellowtails below.

As seen in the picture, the freshness of the flesh is completely different.
The yellowtail that was frozen in a regular freezer saw a change in the overall taste from a fresh yellowtail. The reason for this deterioration is because with the normal method of freezing, the cells in the inner core of the yellowtail are destroyed, and the original freshness quality is lost.
On the other hand for our yellowtail sample, there was absolutely no drip outflow, and the appearance and texture did not change from prior to being frozen. The core freshness quality was retained throughout the flash freezing process.
