Flash Freezer VS Orthodox Slow Freezer
We test froze yellowtail fish.
This time, we used and compared the regular “slow freezer” and
the the popularly used liquid based freezer for fish, the “Re・Joice Freezer”.
Yellowtail Fish
First, we would like to introduce a couple interesting facts about the yellowtail.
The yellowtail is famous for having different names, based on the sizes.
The grown and largest of the fish is called the yellowfish, but the smaller ones have a different name.

In the Kansai region it has been called Hamachi, but recently, it is the name given to farmed, smaller fishes.

Here, we will be reporting the results of comparing the yellowtails frozen with an orthodox slow freezer and liquid based freezer. Please view the pictures of naturally defrosted yellowtails below.

As seen in the picture, the freshness of the flesh is completely different.
While surprised with the difference in appearance, I also sampled both contents.
The slow frozen yellowtail had changed in taste, and did not taste good at all. The reason for this deterioration is because with the normal method of freezing, the cells in the inner core of the ingredient is destroyed, and flavor contents are lost.
For the liquid frozen content, there was absolutely no drip outflow, and the appearance and texture did not change from prior to being frozen. I felt that this was by far the best frozen fish I have ever had.
The difference can be clear with the picture, but when actually sampling the tested product, the liquid frozen content tastes much better. Therefore, when freezing fishes like the yellowtail, the Liquid based Freezers are the best.
Additionally, the liquid based freezer, Re・Joice Freezer is said to be the best for freezing fisheries and seafoods. Therefore, for fisheries and seafood such as the yellowfish, the Re・Joice freezer and other liquid based freezers are recommended.
However, the results of how each ingredients correlate with flash freezers interchange with the types.
