While working in a major electrical engineering company, there has always been the desire to “create a new freezer”.
However, when sharing the idea, the reactions were
“There is absolutely no way that is possible.”
“The research takes up too much of the funds”
and it was difficult to accomplish my dream in the corporation.
Therefore, upon dropping out before retirement, I created a company specializing in design and maintenance of large scale freezers. Beside the daily job, every day consisted of working on a freezer “that will never drop quality of food” with few comrades.
Normally, quality of ingredients drop when frozen. However, preservation through freezing does not use preservatives or change flavor by drying or salting. If reduction of quality can be prevented, then it will be the “world’s greatest preservation technology”. I studied how to prevent quality reduction. When normally frozen, the inner water molecules transform into a large ice and damage the food cells in the core of the ingredient. As a result, the liquid often seen in defrosted meat called “drip loss” is caused. I realized “This is the reason behind quality reduction”.
Therefore we studied movements of water molecules. Upon controlling the movement of water molecules with electromagnetic waves and magnetic strength, we succeeded in diminishing the size growth of ice particles. As a result, 5 years after establishment, we succeeded in developing a corporate oriented freezer. “Frozen food doesn’t taste good at all”.
