CAS Freezer and 3D Freezer: Basic Differences
One of the most frequently asked questions we receive from the clients who come to see our 3D freezer line is
“What is the difference between a 3D freezer and a CAS freezer? Do they use the same technology?”
While there are some similarities between CAS freezer and 3D Freezer technology, but there is a large difference between the two freezer lines as well.
First let’s look at each freezer individually and see what makes the CAS freezer and 3D freezer different and unique. In the lines that follow, we are going to note the features and the technology behind both freezers and let you decide which freezer line is right for your business.
CAS Freezer Technology and Features
Before we talk about which freezer is right for your business, let’s first look at both of the CAS freezer and 3D freezer and see their features and characteristics. We are first going to look at CAS freezing technology and how it works not only from a technical standpoint, but we are also going to look at how CAS freezer is able to help you in your business venture.
CAS Freezers are able to use electrical wave technology to keep the water molecules moving thereby preventing the water molecules from clustering together during the freezing process. The waves create an electrical rotating area which keeps the water molecules in motion in a “spin” like state. This also prevents the molecules from expanding, thereby retaining their original structure.
This motion is able to prevent the water molecules in the CAS freezer from clustering up. This lowers the damage when freezing contents in a CAS freezer while still being able to achieve a high freezing temperature. Generally speaking, unstable ice crystallization in products that are frozen is the main cause of damage and loss in the original texture, flavor and loss of moisture.
With CAS technology and the electromagnetic wave system, contents that are frozen in the CAS freezer will maintain some of their original texture and moisture. However , there are some issues with the CAS freezer system that we also need to go over.
CAS freezers use super-cooling with it’s electromagnetic technology. It’s core feature causes the ice molecules to form but due to the constant movement of the molecules , even when the inside of the CAS freezer reaches temperature of negative -8 C (below the freezing point) contents have yet to reach a completely frozen state.
Due to this freezing speeds of CAS is similar to other conventional freezers in the market. This means that CAS freezers have rapid freezing capabilities similar to other more common freezers in the market. If you make the choice to choose a CAS freezer, you will be able to maintain some freshness after your products go through the freezing process, but in return you will be getting just rapid conventional freezing, maintaining your current overall production process. 3D Freezer: Next Gen Flash freezing Technology
Now that we understand how CAS freezers are able to use electromagnetic technology to freeze contents, let’s take a look at the 3D freezer line and see how our 3D freezers differ from CAS freezing technology. Our 3D freezers have built in 360 Degree Cooling which minimizes the crystallization of food cells. The reduction in crystallization of food cells helps prevent the food’s cell wall from being destroyed, thereby maintaining maximum flavor and freshness.
Unlike CAS Freezers, 3D freezers do not use electromagnetic waves the 360 Anti Cycle Vibration Cold System, or ACVCS is able to get the same results and is able to control ice crystallization on a molecular level. Instead of using the electromagnetic waves to keep the ice crystals rotating and spinning to keep the ice crystals from growing, as you can see in the diagram above, the 3D freezer uses cold fronts and circulates the air within the freezer to have a controlled freezing environment where each and every surface area of the content that is being frozen is hit at the same time to evenly freeze the contents faster while still maintaining most of the contents original freshness even after it is frozen.
This allows the 3D freezer to correctly place the ice crystals in a way in which lowers the spreading and growth of ice crystallization, thereby maintaining the content’s original freshness, flavor, texture, and moisture.
Another point to make is that the 3D freezer is capable of rapid freezing without using super cooling technology to decrease the amount of ice crystals formed, while still being able to completely freeze contents faster than conventional freezers in the market today.
